Here are two of Rita’s Signature Recipes for you to enjoy at home!

Cranberry Banana Nut Bread

1/2 cup Butter
1 cup Sugar
2 Eggs
3 Bananas, mashed
1 teaspoon Vanilla
2 cup Flour
1 teaspoon Baking Soda
1/4 cup Nutmeats
1/2 cup Dried Cranberries

Mix ingredients in order listed. Pour into a greased loaf pan. Bake 1 hour at 350°. Test for doneness, as it may need an additional 5 to 15 minutes baking time.

Baked Apple Pancakes

3 Eggs, slightly beaten
1/2 cup Milk
1 teaspoon Lemon Rind, grated
1 teaspoon Vanilla
1/2 cup All-Purpose Flour
1 tart Apple, such as Granny Smith, peeled and chopped into small pieces
5 teaspoon Butter, divided
1/4 cup Sugar
1/4 teaspoon Cinnamon
Confectioner's Sugar for garnish

In a medium bowl, combine eggs, milk, vanilla and lemon rind. Whisk in flour until blended. Batter will be slightly lumpy. Preheat oven to 400°.

Melt 1 tablespoon of butter in 10" pan over medium heat. Add apples and saute until tender. Place sauteed apples in the batter and pour into a greased baking dish or pie pan.

Meanwhile, in a small bowl, combine the remaining cinnamon and sugar. Melt remaining 4 tablespoons of butter. When pancake has baked 20 minutes, remove from oven and quickly sprinkle with sugar mixture and drizzle with butter. Return to oven for 5 minutes. Serve immediately, dusted with confectioner's sugar.

Enjoy!

Thank you Rita and Stephanie. We had a great time in your lovely inn. The breakfast--perfect!
